Kimchi
Like sauerkraut, Kimchi is a crunchy, sour, probiotic delicacy made by fermenting fresh vegetables with salt in glass or ceramic crocks – but Kimchi’s hot chili peppers add a spicy kick.
At Short Mountain Cultures, we make small batches of kimchi from locally-grown Napa cabbage, daikon radishes, peppers, scallions, ginger, and garlic. Traditional Korean kimchi contains fish sauce, but ours are vegan. Our Smoky Kimchi contains smoked paprika. And for a milder alternative, our White Kimchi leaves out the spicy peppers.
Kimchi tastes delicious on eggs and sandwiches, or with Asian dishes like miso soup, ramen, stir fry, or sushi.
Ingredients: Napa Cabbage, Purple Daikon Radish, Mixed Hot and Sweet Peppers, Scallions, Ginger, Garlic, Unrefined North American Mineral Rich Sea Salt.
