Water Kefir (Tibicos) Water Kefir is a fizzy fermented soft drink flavored with fruit or tea. Refreshing and low in sugar, it is a healthy, probiotic alternative to soda and a great way to introduce fermented flavors to kids. Like kombucha, water kefir is made using a symbiotic culture of bacteria and yeast, or SCOBY. The SCOBY converts sugar to lactic acid and carbon dioxide, creating a naturally carbonated drink.
