Vegetable Kvass

Classic Beet Kvass originated in the small villages of Eastern Europe and is a delicious, savory, probiotic beverage rich in nutrients. At Short Mountain Cultures, we ferment organic, locally-grown beets in a 2 percent salt brine to produce this tasty tonic. Beet kvass is salty and sour like kraut with the earthy flavor of beets.

Start with a 2 ounce shot or add to salad dressing, seltzer, or other juices or smoothies. Substitute beet kvass for vinegar in recipes, adding a rich magenta color to any dish.
